1. To a large bowl add the flour, baking powder, baking soda, salt and sugar. Mix them to combine.
2. Add the optional oil to the bowl along with about ¾ of the milk. Mix well, then gradually add the remaining milk until a slightly tacky (not sticky) dough is formed. You might not need all of the milk. I start off mixing with a spoon then use a clean hand to bring it together.
3. Give it a little knead together a few times in the bowl to bring it together into a smooth ball.
4. Transfer the dough to a lightly floured surface and cut into 4 evenly sized pieces. Shape each one into a neat-ish ball, sprinkle the top with a little flour and roll out in a rough circle shape about ¼ inch thick. Sprinkle the top with a little more flour as you go if the rolling pin starts to stick.

1. To a large bowl, add the flour, baking powder, garlic powder and salt. Whisk very well.
2. Pour in the room temperature coconut milk and applesauce. Use a large spoon to stir the mixture together until it forms into a shaggy texture and no more loose flour remains. Form roughly into a ball.
3. Flour a work surface and scrape the dough from the bowl onto the surface. Keep the flour handy, as you will need it to knead the dough.
4. Adding flour, a little bit at a time, only as needed, to knead the dough for at least 7 minutes until it comes together into a smooth, pliable dough. You will need to add flour consistently, as it will be a bit too sticky without it. It helps to continue to add flour to the counter so it doesn't stick. To knead properly, you will continually rotate (turn), fold over the dough towards you in half and press down with the heel of your hand and pushing it away. Do this repeatedly, adding small bits of flour, as needed, to prevent sticking. Do this until it's smooth and pliable (stretchy and doesn't break). Once the dough is no longer breaking into pieces easily when you pull it, it is done. Kneading the dough is what will give the flatbread that amazing chewy texture and not break easily when cooking.

2. Please keep in mind since this is a no-yeast pizza dough, it will not taste the same as a traditional light and airy, fluffy pizza crust, obviously. It is a thin and crispy crust that is perfect for quick pizza night. We all love it and I make it weekly, but it is not comparable to a yeasted pizza dough, so just keep that in mind. The dough is obviously more dense because of no yeast, so this is why we roll out the dough very thin, so it bakes up nice and crispy. This recipe is not meant to be used for a fluffy pizza crust.
3. The great thing about this dough is it yields 2 large pizzas, about 10-12 inch in size OR yields 3 personal size pizzas, about 8 inch in size. You can use all the dough at once or divide it in half and freeze the rest.
