1. Preheat the oven to 180C/350F. Line a pan with the hazelnuts in a single layer, and toast for 12-15 minutes.
2. Allow hazelnuts to cool completely. Transfer to a large dish towel, and wrap up the corners. Using one hand, press and shake the hazelnuts together roughly, to remove the skins. Do this for 3-4 minutes.
3. Open up the dish towel and the skins should easily fall off the hazelnuts.
4. Place the skinned hazelnuts into a high-speed blender or food processor. Blend for 4-5 minutes, until a flour-like consistency remains. Stir through using a rubber spatula, and blend until smooth and creamy.

1. Preheat your oven to 350ºF and arrange the hazelnuts on a rimmed baking sheet. Toast the hazelnut for 10 minutes, or until their skins begin to crack. (This helps the skins slide off easier.) Allow the nuts to cool, then rub them in a dishtowel to help remove their skins. It doesn't matter if you get every last speck of skin off-- you just want to remove as much as is easily possible.
2. Place the peeled hazelnuts in the bowl of a large food processor fitted with an "S" blade, then process them into a creamy nut butter, stopping to scrape down the bowl if necessary. This process should take 10 to 15 minutes, so be patient. You should hear a "sloshing" sound when the hazelnut butter has reached a nice and runny consistency.
3. Once the hazelnut butter is smooth, add in the coconut sugar, cocoa powder, and coconut oil, and process briefly. The mixture will look crumbly. Add in 1/4 cup of water and process again. Add 1 tablespoon of water at a time after that, until your desired texture is reached. I typically add 2 to 3 more tablespoons of water after the initial 1/4 cup.
4. Enjoy right away, and transfer the remaining chocolate hazelnut spread to an airtight container to store in the fridge. It should last up to 5 days in the fridge, or you can freeze it for up to 3 months.

1. Preheat the oven to 400 degrees F (177 degrees C). Line a baking sheet with parchment paper.
2. Arrange the hazelnuts in a single layer on the baking sheet. Roast for 8-10 minutes, until they are browned and fragrant.
3. Place the hazelnuts into a large container or bowl with a lid. Shake vigorously to remove loose skins. Repeat the process as needed, setting aside hazelnuts that already have their skins removed, until most of the skins are off. (Alternatively, rub the hazelnuts inside a folded towel to remove the skins.)
4. Place the skinned hazelnuts into a high-power blender, like the Blendtec 625. Process for 1-3 minutes, scraping the sides as needed, until the nuts begin to release oil and then form a smooth nut butter. (The Blendtec Twister Jar works well for this - just turn the lid counterclockwise as the blender runs.)
