1. Preheat oven to 375°.
2. Combine 1 1/2 cups mozzarella, cottage cheese, and the next 5 ingredients (through black pepper) in a medium bowl. Spoon about 3 tablespoons cheese mixture into each uncooked manicotti. Pour half of tomato-basil pasta sauce into a 13 x 9-inch baking dish coated with cooking spray. Arrange stuffed shells in a single layer over sauce, and top with the remaining sauce. Pour 1 cup water into dish. Sprinkle the remaining 1/2 cup mozzarella evenly over sauce. Cover tightly with foil. Bake at 375° for 1 hour or until shells are tender. Let stand 10 minutes before serving.

1. Preheat oven to 350 degrees. In a medium-sized bowl mix ricotta cheese, 1 1/2 cups of mozzarella cheese, parmesan cheese, egg, and spices until well blended.
2. Spread 1/2 cup of spaghetti sauce evenly on the bottom of a 9x13 pan.
3. Spoon the cheese mixture into a Ziploc plastic bag. Clip one corner of the bottom of the bag, about 1/2 inch. Pipe the cheese filling into the uncooked manicotti shells. Start on one end of the manicotti shell until about 1/2 full, then pipe the mixture into the other side filling the shell.
4. Place the filled manicotti shells in the 9x13 pan.

Cover tight with foil and bake at 375F until pasta is tender, 60 to 65 minutes, until the pasta is tender and cooked. Uncover; sprinkle with remaining cheese and bake covered 3 minutes longer or until cheese is melted.
