1. Cut at least a 1/4” off all the ends. Then choose how to cut your cucumber. For pickle rounds, slice the cucumbers no thinner than about ⅛-inch thick. For spears, slice in half lengthwise, then keep cutting each in half till you have eight spears per cucumber. Depending on the size jar, you may need to slice the spears through the middle so they’re not too tall for your jar. (This is especially why I like the rounds.) 3*
2. Place the cucumbers into a wide-mouth jar about 3 to 4 inches in diameter. Add fresh dill if desired. 5*
3. In medium pot bring all ingredients except cucumbers to a boil.
4. Boil until the sugar has dissolved then remove from heat, just a minute or two. For crisper pickles let the liquids cool till you can comfortably stick your finger in the mix before pouring over top of cucumbers in the jar.

1. Prepare the number of quart jars equal to amount of pickles you have by running through the dishwasher or boiling for 10 minutes in a pot of water to sterilize.
2. Place the garlic and dill in the bottom of each jar, along with optional red pepper flakes. Pack the cucumbers on top, leaving a 1/2 to 1 inch of head space.
3. In a large saucepan, combine water, vinegar, spices, salt and sugar. Bring to a boil, reduce heat, and simmer for 5 minutes.
4. Ladle the brine into the jar leaving 1/4 inch of head space. Attach lids.

1. Combine the water, vinegar, salt and sugar and boil one minute. Cool slightly.
2. Wash the cucumbers and cut off about 1/16”from each end. This gets rid of some enzymes that would soften the pickles, and allows better penetration of the brine. Pack the cucumbers in a one gallon jar with the dill.
3. Pour the warm brine over the cucumbers. Let stand, loosely covered, at room temperature for three days. (Drape a towel over the jar opening or let lid sit on loosely.) I rubber band everything, especially in fruit fly season.
4. Cover and store in refrigerator. They are ready to eat after the three days but the flavor improves after a week or two in the refrigerator.
