My Nian Gao is a cake made with glutinous rice flour, both brown and granulated sugar, milk, eggs, oil, and a pinch of salt. It is layered or dotted with a sweetened red bean paste, a common ingredient in Asian desserts. However, if you’re not a fan of red bean paste, you can leave it out.
In order to make red bean nian go you need to prepare sweet red beans first. Drain the red beans and put them into a saucepan. Add 3 cups of water into the saucepan and bring to a boil. Once it has reached boiling, reduce heat and simmer for 1 hour, until the red beans are soft enough that you can squash them with your fingers.
Pour Batter into Cake Pan: Wipe the cake pan interior with a little vegetable oil. Pour the Nian Gao Batter into the cake pan through a fine mesh strainer. Method #1 for relatively smooth surface: Place a trivet and pour 1 cup (250ml) of water in the pressure cooker.
