1. Heat a large stainless steel pan or enamled dutch oven (with matching lid) over med/high heat. Add oil and onion. Sauté until lightly golden brown and soft, about 6-7 minutes.
2. Add garlic and continue sautéing and additional minute.
3. Add canned tomatoes along with juice to the onion pan. Break apart tomatoes using spatula until a chunky sauce is formed. Cook on med/high heat stirring consistantly until sauce reduces dramtically in size, about 15- 20 minutes. Note: It is important not to walk away from the pan at this stage as the sauce can burn if not consistently stirred.
4. Once the sauce has reduced in size stir is salt, pepper and herbs and continue cooking for an additional minute. Stir in water and bring to a boil. Reduce heat to low, cover and simmer for approximately 1 hour, stirring occasionally. Once simmering is completed, process sauce with an immerssion blender. Note: The 1 hour simmering process will intensify flavors and help to reduce sauce to the perfect consistency for pasta. Processing with an immerssion blender is an optional step, however is highly recommended. If using sauce for homemade pizza, simmer for an addittional 30 minutes uncovered, stirring occasionally if sauce is not thick.

1. With an electric mixer on high, whip the heavy cream in a bowl just until frothy and add in the 1/3 cup sugar substitute and vanilla and continue to whip just a little more to blend; do not whip all the way to soft peaks yet. Put half of the partially whipped mixture into another bowl and finish whipping it on high speed until stiff peaks form. Be careful not to overwhip, or the cream will break. Set aside the vanilla cream.
2. To the first bowl with the other half of the partially whipped cream mixture, add in the cocoa powder and 2 tablespoons more sugar substitute and finish whipping on high until stiff peaks form, again being careful not to over-whip. This is the chocolate cream.
3. In each of 4 parfait glasses, layer a couple spoonfuls of chocolate cream, followed by some fresh strawberry slices, and top it with a couple spoonfuls of fresh vanilla cream. Chill completely before serving. Garnish with a strawberry fan and sprig of fresh mint.

3. Put into the fridge for at least one hour, 2 hours if you have the time. If you are able to I recommend stirring the mixture again about half an hour into fridge time, it just further ensures the chia seeds are evenly distributed, as if they aren’t parts may not set properly.
4. Once the vanilla layer has been in the fridge for 1-2 hours it’s time to move onto the chocolate. Using a different glass, jar or bowl (this one is just for mixing so doesn’t need to look pretty), mix all of the chocolate layer ingredients together. As with the vanilla layer, mix well until starting to thicken then leave for 30 seconds and stir again. The chocolate will need a bit more stirring than the vanilla to make sure the cacao is fully incorporated.
