1. Preheat the oven to 180°C. Remove any fat or skin from the chicken and place in a baking dish.
2. Chop the onions and peppers into large chunks and place in the baking dish. Spray with low calorie cooking spray.
3. Sprinkle over all the spices, xanthan gum and tomato purée all over the chicken and vegetable, and add the lemon juice. Mix to combine fully.
4. Place in the oven and cook for 40 minutes until the chicken is browned and cooked through. You may need to add a couple of tablespoons of water to the dish to make some extra sauce - it really depends on how much liquid comes out of the vegetables and chicken during the cooking process.

3. Cut the chicken into 8 pieces or divide the chicken legs at the joint. Place them in a large ceramic or glass casserole dish. Add the peri peri sauce and massage it well into the chicken. Cover the dish with cling film and let marinate for at least 4 hours or overnight.
4. Take the chicken out of the refrigerator about 30 minutes before cooking it.In the meantime preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
