2. Season each side of the chicken breast cutlets with salt, pepper, and 1/2 teaspoon of Italian seasoning.
3. Add the avocado oil to a large oven proof skillet (such as cast iron or stainless steel) and heat over medium-high heat. Brown each side of the chicken cutlets and cook until a meat thermometer reads an internal temperature of 150F.
4. Remove the chicken from the pan to a plate and set aside. Pour the marinara in the skillet and scrape any browned bit from the bottom of the pan with a spatula. Return the chicken to the pan and top each cutlet with 1/4 cup of shredded mozzarella cheese, followed by the rest of the Italian seasoning.

2. Sprinkle each side of the chicken breast with the paprika, onion powder, salt, pepper, and half the oregano or Italian seasoning.

Using a slotted spoon, remove the chicken from the skillet (you want the oil and juices to remain in the skillet) and transfer to a plate.
4. Using the same skillet, cook the onion for 3-4 minutes until translucent. Then add the garlic and fry for another minute. Scrape any brown bits from the bottom, before adding the crushed tomatoes, roasted capsicum, tomato paste, red pepper flakes (if including) and the rest of the oregano or Italian seasoning. Mix everything together and gradually bring the sauce to a low simmer. Cook for around 4 minutes until the sauce thickens, stirring a couple of times.
