Bring to a boil and reduce to a simmer once more. Stir well and cook uncovered for 10 to 15 minutes, stirring regularly, until the pasta is tender. Adjust the seasonings, adding more salt (1/4 teaspoon at a time) and pepper if necessary, and stir in the balsamic vinegar, if using. Serve hot topped with fresh Parmesan and parsley.
