Tex-Mex Migas. Heat the oil in a large cast iron or nonstick skillet over medium heat until shimmering. Add the onion and jalapeños, season with salt and pepper, and cook until the onion is soft and translucent. Meanwhile, place the eggs and salsa in a medium bowl, season with salt and pepper, and whisk to combine; set aside.
Migas is a popular Tex Mex egg dish made with chopped corn tortillas, cheese, tomatoes, jalapeños, and onions. I serve it plated with tortillas on the side, but they can also be wrapped in a tortilla, taco style.
The simplest version of Migas consists of the tortilla chips mixed into the scrambled eggs. Some people like mixing in some diced vegetables, like onion, tomato, jalapeños, and maybe even bell peppers. Although it’s not as common, you can also add diced potatoes to your migas.
