Turkey Tetrazzini Recipe. Ingredients. 12 ounces mushrooms, sliced (about 4-5 cups) 8 Tbsp unsalted butter, divided 3 Tbsp, 4 Tbsp, and 1 Tbsp. 1/4 cup all-purpose flour. 12 oz egg noodles, spaghetti, linguini or other pasta.
Tetrazzini is generally very bland. As is, this recipe was no different; flavor is lacking. Tried again and here's what I did to amp up the flavor: Sauté the mushrooms in olive oil, butter and white wine. Also while sautéing, add ~4 minced cloves of garlic to the mushrooms, and several sprigs of thyme. Season well with salt & pepper.
I used red wine this year and only had a 12 lb turkey (adjusted the cooking time obviously) and it was perfect. Great recipe Martha! I have become a turkey snob after using this recipe to cook my turkeys several years ago and totally disagree with the comments about this turkey not being worth the time!
I also make a "rack" of rough-cut carrots, celery,onions, celeriac and parsnip. When the turkey is cooked and resting, place the veg from the bottom of the roaster in a blender and add about 1 1/2 cups low sodium chicken broth. Buzz this up and add to your gravy.
