Pistachio Maamoul Cookies are very famous traditional Middle Eastern cookies that have been around for generations. They are stuffed with ground pistachios and dusted with powdered sugar. Place all the ingredients in a bowl and knead very well with your hand.
1/2 cupchopped pistachios 1 tspvanilla extract Instructions Combine all of the cookie ingredients in a medium bowl and mix well. Form into a long roll and wrap tightly with plastic wrap. Chill for 30 minutes. Unwrap and slice into 1/2 inch thick rounds.
Maamoul is usually the general term of this type of cookie. It is filled with either Dates, Pistachios, Walnuts, Pecans and even some people fill them with dried fruits like figs. But my favorites are the Date and Pistachio filled Maamouls.
In a bowl, combine semolina, butter, ghee, sugar, nutmeg, mahlab, and yeast. Mix the ingredients well then cover and set aside for at least 4 hours. Pin an electric mixer, blend the pistachio until they are completely crushed. Remove and place in a bowl.
