1. Preheat oven to 200/180C (350-375F) fan-forced and get a 32cm pizza tray or a large sheet pan to have it on hand.
2. In a microwave-safe bowl, combine 1 and 1/2 cup of grated mozzarella cheese with almond meal and cream cheese.
3. Mix well and microwave for 1 minute, or until cheese is melted. Immediately add in the egg and using a silicone spatula or your clean hands stir until everything comes together into a dough form.
4. Compact the dough into a large ball. Place the dough between two pieces of parchment paper and roll out to a 1/4-inch thick circle.

5. Prepare the optional sauce and set it aside while you work. Preheat the oven to 425 and prep a baking sheet with parchment paper. If you are not using a baking sheet, simply set out a large sheet of parchment paper to prepare the pizza on. This is a good recipe to bake on a lower rack in the oven so that the crust can evenly bake.
6. In a medium microwave safe bowl, microwave the mozzarella cheese and the cream cheese for 90 seconds (or until melted), stopping every 30 seconds to stir. When the ingredients have melted remove the bowl from the microwave and allow the ingredients to cool for a few minutes.
7. Next, stir in the eggs and the flour. When you are able to, use your hands to to help mix the dough. This dough is not like a normal dough to work with as it has a wetter consistency. I have a couple of tips shared above that can help if needed. Allow the dough to sit for a few minutes so that the cheese absorbs the coconut flour.
8. Next, transfer the dough to the prepped baking sheet or parchment paper. Using a spoon, spread the mixture out into a round or rectangle shape until it’s about ¼” thick. Use a fork to poke holes into the dough to allow for the dough to rise properly during the baking process (we are not using a leavener). Bake the pizza crust for 8-10 minutes, until golden brown.

1. Prep your pizza pan for nonstick. I use parchment paper as it makes baking and transferring the pizza easier.
2. Start my stirring together the yeast and warm tap water in your mixing bowl. Allow this to sit for a few minutes in order to activate the yeast.
3. Next, add the flour to the bowl. We will start by slowing adding 2 cups of the flour. Then we will any additional later on if the dough seems loose or sticky. Also at this time, add the salt to the bowl.
4. I suggest using a dough hook attachment with your mixer if you have one. Use a slow to medium speed on the mixer as well. If your dough seems to not wanting to form a bowl after a minute of mixing you can add a tablespoon of additional flour to the bowl as it mixes. You can repeat this last step as needed.
