1. In a mixing bowl, beat together the butter with the sugar alternative. Then add the flour, lemon zest, and the vanilla extract to the bowl.
2. Once the batter has been mixed you can divide it in half. Wrap each dough half in plastic wrap and refrigerate for at least thirty minutes.
3. When you are ready to make your cookies remove the cookie dough from the refrigerator. Preheat your oven to 300 and prep your cookie sheets with Parchment Paper. Also, we are going to roll out each of the cookie dough halves to cut into shapes Using a rolling pin, roll out the dough (1/4-1/2"). You can do this between the two sheets of wax paper if desired.
4. Bake the lemon shortbread cookies for 18-20 minutes or until they begin to brown on the edges. Allow the cookies to cool and top them as desired.
