1. In a saucepan, saute onion, mushrooms and parsley in 1/4 cup broth until vegetables are tender.
2. Combine cornstarch, pepper and 1/2 cup of broth; stir until smooth.
3. Add to pan with the remaining broth. Bring to boil, stirring occasionally; boil for 2 minutes.

1. Preheat a large saute pan over medium heat. Add the onion and mushrooms. Stirring occasionally, cook until dry and softened, about 10 minutes.

4. Stir in the tamari, and reduce heat. Taste and adjust seasoning as desired. Serve immediately, or allow gravy to cool, then refrigerate until ready to re-heat and use.
