DirectionsStep1Preheat oven to 375° Fahrenheit. Grease a loaf pan, or line with parchment paper, and set aside.Step2In a large bowl, combine the dry ingredients: sorghum, oat flour and masa (or your preferred Low-FODMAP flour), psyllium husk, baking powder, baking soda and sea salt. Stir briefly to mix.Step3Pre-measure the liquid ingredients, so they're all ready, (or combine them in a small bowl). Add the wet ingredients to dry ingredients: water, fat of choice, sweetener and vinegar.Step4Use handheld beaters or other electric mixer to combine. Dough will be thin at first, but after mixing and sitting for a minute will become quite thick.Step5Using a spatula or your fingers and hands, scoop/scrape dough into loaf-shaped mound. Transfer into prepared loaf pan.Step6Shape to be slightly mounded in the center. Wet three fingers or the back of a spoon with water to rub and smooth the top surface.Step7Bake in preheated oven 50 to 60 minutes. To check for doneness, you may turn the loaf pan upside down to gently dump out the loaf, and give the bottom a light thump with your fist. The inside should sound hollow.     1. For the Bread: Preheat oven to 350°F (180°C). Coat an 8 ½-inch by 4 ¼-inch (21.5 cm by 10.5 cm) loaf pan with cooking spray, line with parchment paper, overhanging the two short sides, then coat the paper, too and set aside.
    2. In a large bowl, whisk together the flour, sugar, baking powder and salt; make a well in the center. In a separate bowl place the coconut milk, coconut oil, eggs, lime zest and juice and vanilla extract and whisk together well.
    3. Add the wet ingredients to the dry ingredients. Stir and fold until a few floury streaks remain. Fold in ½ cup (38 g) coconut. Pour batter into prepared pan.
    4. Bake for 30 minutes. Sprinkle remaining 2 tablespoons of coconut over the loaf. Continue baking for about 25 to 30 minutes longer, or until bamboo skewer inserted in the center comes out clean. Place the loaf pan on a cooling rack until just warm, then use parchment paper to help unmold. Cool upright on wire rack.
