1. Preheat oven to 400F and place a rack in the upper 2/3 slot of your oven.
2. Rinse the artichoke hearts well, cut each in half, giving you about 38 halves.Dry the artichoke hearts on paper towels, cut side down, while you mix the topping.
3. Mix the almond flour, garlic, parmesan cheese, salt, pepper, parsley, lemon juice and zest in a bowl. Place the artichoke hearts in a 9" x 9" glass or ceramic baking dish that has been sprayed with non-stick spray, cut side up.
4. Spoon the mixture over the tops of each artichoke heart. Drizzle olive oil over the tops and bake for 15 minutes. Remove from the oven, increase the temperature to 425F and drizzle more olive oil over the top. Then bake for another 5 minutes or until slightly golden.

2. In a small bowl mix together the mayonnaise and the grated parmesan cheese. Place the thin sliced chicken breast in the bowl of mayo and cheese mixture. Completely coat the chicken with the mayo and cheese mixture. Set aside.
3. In a large casserole dish mixed together the chopped artichoke hearts, cherry tomatoes, sliced onion, jalapenos, and olive oil with the salt. Push the vegetables all the way to one side of the casserole dish. Nestle the 4 oz block of goat cheese in the middle of the vegetables.
4. Transfer the chicken to the empty side of the casserole dish. The chicken will fit snugly. Sprinkle the chicken with the Italian seasoning and garlic powder.
