This isn’t just any enchilada sauce y’all. This is certified Tex Mex Chili Gravy. This sauce is exactly what you will find smothering enchiladas in the great state of Texas. Designed to be a combination of gravy that could be found on a steak and a traditional Mexican enchilada sauce, this Chili Gravy is a cornerstone to Tex Mex cooking.
Pour 1/4 cup of the chili gravy into the bottom of a 9 x13'' pan. Fill each corn tortilla with a handful of cheese (keep about 1/2 cup for sprinkling over the top, at the end). Roll tightly, and place seam side down in the pan. Top with enchilada chili gravy. Top with remaining 1/2 cup of cheese. Bake for 20-25 minutes or until hot and bubbly.
