That classic, picnic-style potato salad is the perfect side dish for almost any occasion. And honestly, if it weren’t for those pesky potatoes, it would be pretty low carb and keto-friendly dish. That’s where we turn to the oft-overlooked turnip and made a turnip low carb potato salad!
This low carb cauliflower recipe starts with a head of cauliflower. Chop it into bite-sized chunks and steam until as tender as you’d like. I prefer the slightest bit of crunch. I use this steamer set (affiliate link) to steam right on my stove top. Super easy to use and veggies steam in about 5 minutes.
Fantastic! Used red onion and a mixture of pickles. The advice of cooking cauliflower for only 5 minutes and the immersing in ice water bath was perfect. Others commented on too much egg but my husband and I both thought the 4 eggs gave it additional flavor. I did add some chopped celery to give an extra crunch. Will be making again.
