There are two ways of making lauki halwa. Either cook lauki directly in milk or saute lauki first in some ghee and then cook in the milk. I have sauteed the lauki in ghee first and then cooked it in milk. This lauki halwa recipe does not need any addition of khoya or mawa.
Instructions firstly, heat ¼ cup ghee and roast 5 cashew, 5 badam and 2 tbsp raisins. roast the nuts to golden brown and keep aside. now add in grated lauki and saute for 5 minutes. saute till the lauki shrinks slightly and changes colour. add in ½ cup milk and mix well. cook for 10 minutes or till milk thickens and lauki gets cooked completely.
To make low-fat gajar halwa, heat the ghee in a pressure cooker. Ghee imparts a wonderful flavor to the gajar halwa. When the ghee melts, add the carrots. Sauté on a medium flame for 5 minutes, while stirring occasionally. Add ¾ cup of milk. This being a healthy, low-fat gajar ka halwa, we are making use of low-fat milk.
saute till the lauki shrinks slightly and changes colour. add in ½ cup milk and mix well. cook for 10 minutes or till milk thickens and lauki gets cooked completely. further add in ¾ cup sugar and mix well. sugar melts and boil for 5 minutes or till it thickens. meanwhile prepare khoya by heating 1 tsp ghee and ¼ cup milk.
