Icing sugar / powdered sugar: this is one of the secret ingredients for soft and cakey cookies just like the Lofthouse brand. I don’t recommend using regular or granulated sugar for this recipe.
In a medium bowl whisk together the flour, baking soda, baking powder and salt. Set aside. In the bowl of a stand mixer with the paddle attachment, cream together the butter and granulated sugar at medium speed until light and fluffy, about 3-4 minutes. Scrape down the sides of the bowl with a rubber spatula as needed.
