I use to love the Lofthouse sugar cookies but of course they are NOT keto friendly. So I came up with an easy keto low carb cookie recipe to enjoy my favorite cookies. These low carb cookies are pretty close to the real thing a soft melt in your mouth cookie with frosting.
Lofthouse Cookies are so soft because of a combination of sour cream, baking soda and baking powder. Baking powder makes a more cake-like cookie but the acid in the sour cream activates the baking soda giving these even more soft texture! Are lofthouse cookies good? I love the homemade cookies better than the store bought ones.
Cake Flour: That “enriched bleached wheat flour” along with corn starch and the general “cakey” taste of the cookies indicated we needed to use cake flour rather than all purpose flour as the dry ingredients base of these lofthouse cookies. It will keep them super soft with a melt in your mouth crumb.
