1. Start washing accurately the lemons and drying them with a towel.
2. Using a vegetable peeler, peel the lemons. It's very important that you don't remove the white part of the peels, you need only the yellow one.
3. Put the peels into a sealed glass container (I use a jar) and cover them with alcohol. Seal the container and put it in a fresh and dark place.
4. I move the container every day to mix the ingredients, for at least one week, usually for 10 days. You will see every day the peels loose color and the liquid become more intensly .yellow.

1. Wash the lemons in warm water and scrub to remove any wax.
2. Use a vegetable peeler to peel the lemons (see note). Yellow flesh only no white part. Add the lemon peel to a large container, pour in the alcohol, cover with plastic wrap. Leave for 7 days at room temperature.
3. Add the sugar and water to a pan over medium high heat and stir until the sugar is dissolved. Remove from the heat and allow to cool completely.
4. Strain the peel from the alcohol, discard the peels. Add the cooled sugar syrup to the alcohol. Transfer to a sealed container and refrigerate.
