1. Add lentils and water (or vegetable broth) to the Instant Pot and stir to prevent sticking. Pressure cook on high for 8-10 minutes (8 minutes for more firm, 10 for more tender // it will take about 8 minutes for the Instant Pot to pressurize before cooking begins).
2. Once the timer goes off, allow to naturally release for 15 minutes, then release any remaining pressure. Carefully remove lid once steam has fully escaped and strain off any excess cooking liquid.
3. Enjoy immediately in stews, soups, sloppy joes, lentil "meatloaf," shepherd's pie, salads, and much more! Store cooled leftovers in the refrigerator up to 5 days or in the freezer up to 1 month. Reheat in a saucepan on the stovetop, adding a little water, as needed, to prevent sticking.

1. Combine the lentils and water in the bottom of the Instant Pot. You can add up to 1/2 teaspoon of salt if you want them seasoned, but keep in mind that they may turn out a little more firm that way. Don't season with salt until the end of the cooking cycle if you want to guarantee soft lentils.
2. Secure the lid and move the steam release valve to Sealing. Press the Manual or Pressure Cook button to cook at high pressure for 9 minutes. (They will still have a little bite to them this way; cook for 10 minutes for softer lentils.) It will take 10 minutes for the pot to come to pressure before the cooking cycle begins, so the screen will just read "On" until then.
3. When the cooking cycle completes, immediately move the steam release valve to Venting to release the pressure right away. Make sure your hand isn't over the steam release valve, to avoid the hot steam touching your skin. When the floating valve in the lid drops, the pressure is released and it's safe to open the lid. (If you forget to release the pressure right away, it will still be okay-- your lentils will just be softer when you remember to go check on them.)
4. Stir the lentils and make sure they are tender to your liking. You can always add an extra 1/2 cup of water and pressure cook them again for 2-3 minutes, if you want them softer, but they should be done at this point. There shouldn't be too much liquid left in the pot, so you can use them right away without draining them.

2. Press the Pressure Cook button (making sure the “High Pressure” setting is selected) and set the time for 9 minutes. Wait while the Instant Pot cooks. (Note: It takes about 5 to 10 minutes for the pot to “preheat” and come up to pressure before it starts cooking. During cooking, avoid touching the metal part of the lid.)
3. Vent the remaining steam from the Instant Pot by moving the pressure release handle to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. Open the pressure cooker lid.
4. Open the lid and stir; there will be some leftover broth but the lentils will soak it up as they sit and become perfectly moist. Serve warm. (Storage info: Leftovers can be stored in the refrigerator; reheat on the stovetop.)
