1. In a mixing bowl, beat together the butter with the sugar alternative. Then add the flour, lemon zest, and the vanilla extract to the bowl.

3. When you are ready to make your cookies remove the cookie dough from the refrigerator. Preheat your oven to 300 and prep your cookie sheets with Parchment Paper. 4. Bake the lemon shortbread cookies for 18-20 minutes or until they begin to brown on the edges. Allow the cookies to cool and top them as desired.
