DirectionsStep1For the graham cracker crust, grease a 9-inch pie pan very lightly with non-stick baking spray (or rub it with softened butter). Wipe out any excess grease with a paper towel.Step2In a large bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter. Mix just until it resembles wet sand.Step3Press the crust firmly into the bottom and sides of your prepared pie pan — the tighter you pack the crust, the less crumbly it will be! Freeze the crust for 1 hour.Step4While the graham cracker crust sets in the freezer, prepare the lemon pudding. Whisk the pudding mix and whole milk in a large microwave-safe bowl. Microwave the pudding for 8 minutes, stirring every 2 min…Step5After 8 minutes the pudding should be thick and bubbling — if it isn’t thick enough to coat the back of a spoon, cook it for an additional 2 minutes.Step6Whisk in the lemon juice, lemon zest, and vanilla extract. Place a piece of cling wrap directly touching the surface of the pudding and place it into the fridge until the crust is finishing setting.Step7Once the crust and pudding are chilled, pour the pudding carefully into the crust and spread it out to create an even layer. Place the pie back into the fridge to set for 3 hours (or until the pudding is fully set).Step8When you’re about ready to serve the pie, it’s time to make the meringue. Heat a small saucepan of water over medium heat and bring the water to a simmer. Place a heatproof bowl over the pot and ensure th…Step9Add the egg whites, granulated sugar, and cream of tartar to the bowl. Whisk constantly for 4 to 5 minutes, or until the mixture is white, foamy, and reaches 165 degrees F on an instant read thermometer.Step10Transfer the egg white mixture to the bowl of a stand mixer fitted with the whisk attachment. Beat on medium speed for 3 to 4 minutes or until stiff peaks form. Add the vanilla and mix just to combine.Step11Spread the meringue over the pie and toast with a kitchen torch, if desired. This meringue is delicious both plain and toasted!IngredientsIngredients1 ½ cupsGraham Cracker Crumbs¾ cupGranulated Sugar6 tablespoonsUnsalted Butter (melted)2 3.4-ounces packagesLemon Pudding Mix (cook and serve)3 ½ cupsWhole Milk2 tablespoonsFresh Lemon Juice1 teaspoonFresh Lemon Zest2 teaspoonsPure Vanilla Extract (divided)3 Large Egg Whites¼ teaspoonCream Of TartarSee moreNutritionalNutritional314 Calories14 gTotal Fat36 mgCholesterol40 gCarbohydrate189 mgSodium6 gProteinFrom everydayfamilycooking.comRecipeDirectionsIngredientsNutritionalExplore furtherJello Classic Lemon Meringue Pie Recipe SparkRecipesrecipes.sparkpeople.comJello Classic Lemon Meringue Pie - SparkRecipesrecipes.sparkpeople.comLemon Meringue Pie Jello - Recipes - Cooks.comcooks.comJell-O® Lemon Pie - Allrecipesallrecipes.comJello brand instant lemon meringue pie recipe - CookEatSharecookeatshare.comRecommended to you based on what's popular • Feedback

    1. To make crust: Set oven rack at lowest level; preheat oven to 425 degrees F. Stir together flour, 1 tablespoon sugar and 1/8 teaspoon salt in a medium bowl. Melt 1 tablespoon butter in a small saucepan over low heat. Cook, swirling the pan, until the butter is a light, nutty brown, about 30 seconds. Pour into a small bowl and let cool. Stir in oil. Slowly stir the butter-oil mixture into the flour with a fork until the mixture is crumbly. Gradually stir in enough ice water so that the dough will hold together in a ball. Press the dough into a flattened disk.
    2. Place the dough between two sheets of plastic wrap and roll into a circle about 12 inches in diameter. Remove the top sheet and invert the dough over a 9-inch pie plate. Remove the remaining wrap. Fold the edges under at the rim and crimp. Line the shell with a piece of foil or parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, remove the weights or beans, and continue to bake until the crust is golden, 8 to 10 more minutes. Cool the pie shell on a rack while you make the filling. Reduce the oven temperature to 350 degrees .
    3. To make filling: Whisk together 1 1/4 cups sugar, cornstarch and 1/4 teaspoon salt in a medium heavy saucepan. Gradually whisk in boiling water. Place the saucepan over medium-high heat and bring to a boil, whisking constantly. Reduce heat to medium-low and cook, stirring, for 1 minute. Remove from the heat.
    4. Whisk together lemon juice, zest, egg and 1 egg white in a small bowl. Whisk a small amount of the hot sauce into the egg mixture, then whisk this mixture back into the sauce. Return to a simmer over medium heat, stirring, then cook for an additional 30 seconds. Stir in the butter until melted and pour into the baked pie shell. Set aside while you prepare meringue.
