1. Preheat your oven to 180C/160C Fan - grease and line your 2lb loaf tin!
2. Beat together your butter and sugar together till light and creamy!
3. Add in your flour, eggs and lemon and beat again till combined. It'll be a smooth cake mixture!
4. Add the mix into the cake tin and bake. This can take 55-65 minutes - but check from 50 minutes onwards.

5. Preheat the oven to 170C (fan). Grease and line 1lb loaf tin with baking paper and set aside.
6. In a bowl of an electric mixer cream together butter and sugar on medium speed, until pale and fluffy, about 3-4 minutes. Change speed to low and add beaten egg, a little at a time, mixing well after each addition, until you have incorporated all the egg.
7. Sift in half of the flour and salt into the butter mix and using a spatula, fold it gently. Add yogurt or cream and fold again. Sift in the remaining flour and add 1 tsp of lemon zest and gently fold together until combined.
8. Transfer the batter into baking tin and bake in the oven for 35-45 minutes, or until toothpick inserted in the middle comes out clean. Allow the cake to cool in the tin.
