Taking out the potatoes you can replace them with peeled radishes, and using xanthan gum instead of white flour you create a low carb version of beef gravy.
Depending on what sort of stew you have over you can either just dilute the remains with more stock, or possibly cream, stir into some existing soup (here are two beef soup recipes which would be great with a little leftover stew stirred in) or make up a whole new soup using my easy flexible soup recipe and include your leftovers.
If I can get chuck-eye steaks in the store that are on sale, they are even more tender and that’s a treat to use in the low carb beef stew.
How To Make Low Carb Keto Beef Stroganoff: Place a large saucepan over high heat. Add the oil, onion, garlic and thyme. Saute until the onion is starting to turn translucent.
