1. Preheat the oven to 400 F and grease a large cast iron skillet or 11 x 7″ baking pan.
2. In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl, pour in the warm water and stir in yeast. Allow the mixture to rest for 5 minutes, or until active and foamy. If the yeast does not foam up after 5 minutes, discard the mixture and try again with fresh yeast.
3. Add in the olive oil, honey, egg, rosemary, parsley, garlic powder, sea salt and 1 cup of the flour. Mix on low until everything is combined. Switch to the dough hook (or use a large wooden spoon) and add in the remaining flour. Mix on low to combine, about 1 minute, then turn the mixer to medium-high and knead for 5 minutes. If you aren’t using a stand mixer, knead the dough by hand for 5-7 minutes, adding just enough flour to create a soft, but not sticky, dough.
4. Seperate the dough into 2 equal halves, then separate each of those halves into another half, then into 3 equal pieces. You should have 12 pieces in total. Roll each piece of dough between your hands to form a ball, then place the ball into the greased pan, leaving a bit of space (1-2″) between them. Cover the dough with a clean dishcloth and allow the rolls to rest for 10 minutes before placing them in the oven and baking for 12-14 minutes, or until the rolls are lightly golden on top.

1. Melt the mozzarella and cream cheese together in a microwave-safe bowl at full power for 1 minute. Stir, then heat another 30-45 seconds, it should be molten. Scrape the cheese into the bowl of a food processor and process until thoroughly mixed. Add the egg and mix until blended.
2. Add the dry ingredients to the food processor and process until thoroughly combined (about 10-15 seconds).
3. Spray a piece of cling film with oil and scrape the bread dough onto the center of the cling film. It is VERY STICKY. Gently shape the dough into a disk or rectangle and place in the freezer to cool until the oven is ready. (NOTE: if your dough is not very sticky, then it does not need to go into the freezer.)
4. Preheat the oven to 400 degrees F and position the rack to the middle of the oven. Line a cookie sheet with a piece of parchment or a Silpat. (NOTE: I place an old metal pie plate in the bottom of my oven while preheating. Then, I add about 6 ice cubes to it when the rolls go in. This forces them to rise.)

1. If your eggs are refrigerated, place them (still in their shells) in a bowl of hot tap water to take the chill off and set the bowl aside until you need the eggs. Line a rimmed baking sheet with parchment paper.
2. Turn the oven on to it's lowest possible temperature (Mine is 170°F). As soon as it is preheated, turn the oven off. The goal is to have the oven temperature between 80°F and 95°F when it's time to proof the rolls. If the temperature is over 100°F it will kill the yeast too soon and the rolls won't rise as much.
3. Use an instant read thermometer to ensure that the water is 110° - 115°F. Stir together the warm water, yeast, and sugar. Set aside as you move on to the next step of the recipe. After 10 minutes the yeast mixture should have foamed enough to double in volume. If not, try again with a new packet of yeast.
4. In a large mixing bowl, combine the almond flour, salt, baking powder, psyllium husk powder, and onion powder.
