4. To start the pastry cream, put the milk in a saucepan over medium-low heat. Stir occasionally to prevent scalding. It shouldn’t bubble; we’re just heating the milk to between 35°C and 40°C. Anything more than that could curdle, instead of temper, the yolks. If you haven’t got a thermometer, just test it on your wrist. It should be about as hot as you can stand without burning you.
