1. Place the chicken breast halves in between plastic wrap and use a meat mallet or rolling pin to gently pound them until thin.
2. Place a skillet over medium-high heat and coat with oil. Add breadcrumbs to a shallow bowl. Add eggs to another shallow bowl and beat well.
3. Dip the chicken in the egg mixture on both sides, and then coat with breadcrumbs on both sides.
4. Place in the pan with the hot oil. Cook for a a few minutes on one side, until browned, then flip and cook on the other side until cooked through.

2. Meanwhile, in small bowl, mix sour cream and taco seasoning mix.
3. Place 1 flour tortilla in bottom of pie pan. Spread about 2 1/2 tablespoons sour cream mixture over tortilla. Top with 1/3 of ground beef mixture and 1/2 cup of the cheese. Repeat layers 2 more times. Sprinkle with remaining cheese.
4. Bake uncovered 20 to 25 minutes or until thoroughly heated and cheese is melted. Sprinkle with remaining 2 tablespoons cilantro before serving; cut into wedges.
