1. Read the whole recipe first. This is an easy recipe, if made over two days, allowing the cake to freeze overnight before coating. Set your oven to 150°C fan or 160°C no fan. I used a USA pan like this 33 x 23cm I will cut the whole thing evenly horizontally, but you could use 2 square tins. *See my tips. Prepare your pan, or for the USA pan I used, you only need to add one sheet of baking paper no need to grease for this pan.
2. Pop the jug on to boil, place the small cubes of butter into a bowl.

      1. Jamie Oliver's Lamingtons - Made the traditional way with flour, eggs and sugar. YUM! If you want to make a tiny tweak to add some goodness, switch the white sugar for the brown caster variety (found in all the big supermarkets) or even coconut sugar.
      2. Gluten and Dairy-Free Lamingtons - These ones are made with an almond meal and tapioca flour base. Add a drizzle of rice malt syrup (a 'better' sugar) and they're ready to go.
      3. Paleo Lamingtons - These too are made with an almond and tapioca flour base but there are a few extra steps to show you how to pop extra chocolate in the middle.
      4. Cannellini Bean Lamingtons - Sounds weird but trust me, a cake made with these beans is actually really yum!
      5. Marshmallow Lamingtons - The guys at I Quit Sugar made their own vanilla bean marshmallows (YUM!) and then coated them in chocolate and coconut. How's that for a non-traditional lamington that tastes amazing?

      6. Bake your choice of cake into a lined tin (approx. 30-20cm) for 15-20 minutes.
      7. Allow to cool on a cake rack and then trim the edges.
      8. You can cut into small squares for little lamingtons. For big ones like pictured, I halved the cake, sat one on top of the other and cut into six squares.
      9. Pop the cake in the fridge for 10 minutes or so to chill while you make the chocolate.
