1. Season the lamb chops all over with salt and pepper.
2. Place a foil-lined baking sheet in the oven and preheat the oven to 200°F (the pan will preheat as well).
3. In a large cast iron skillet, heat 1 tablespoon olive oil over high heat until very hot. Add half of the lamb chops and cook until a well-browned crust forms, 4 minutes per side. Transfer the cooked chops to the baking sheet and keep them warm in the oven. Add the remaining tablespoon olive oil and cook the remaining chops (4 minutes per side); transfer to the oven with the rest of the chops to keep warm while you make the sauce.
4. Lower the heat under your cast iron skillet to medium-high; add the garlic and shallot and cook, stirring constantly for 1 minute. Add the wine, chicken broth, rosemary and thyme; bring to a boil, stirring and scraping up the crispy bits on the bottom of the pan, and then simmer until the liquid is reduced by half, about 5 minutes. Remove from heat and whisk in the butter.
