1. 1 Spray a large non-stick frying pan (which has a lid) with olive oil and set over medium heat. Add onion, garlic and celery. Cook, stirring occasionally, for 3 minutes, or until fragrant.
2. 2 Increase heat to medium-high. Add lamb mince to pan and cook, stirring with a wooden spoon to break up mince, for 5 minutes, or until browned. Stir tomato paste into mince and cook for 1 minute.
3. 3 Add kumara, tomatoes and beef stock to pan. Cover and bring to the boil. Reduce heat. Simmer mixture for 20 minutes, or until kumara is tender. Stir baby spinach and peas into mixture and cook until spinach wilts. Leave mixture to cool slightly.
4. 4 Preheat oven to 200°C. Spray 4 x 1 1/2-cup capacity (10cm wide) heatproof dishes or bowls with olive oil. Spoon lamb mixture into dishes. Lay pastry sheet on a work surface to thaw, then cut out 4 x 12cm rounds. Top pie filling in each dish with a pastry round, pressing excess pastry over edge. Use a sharp knife to score centre of each pastry lid with two small slits and brush lightly with milk.

4. Prepare the bechamel/cheese sauce as directed. Pour cheese sauce over the cooked vegetable and mix.

1. To make the pastry put the butter, flour & salt into a food processor and pulse until it reaches the look of breadcrumbs. Add the water one tablespoon at a time and pulsing in between until the dough just starts to clump a little – it should still look quite crumbly. Tip the dough out onto a lightly floured surface and, working quickly, pull it all together (it will be very crumbly but that is perfect), then cut 1/3rd , shape into a disc and cover in plastic wrap. Shape the other 2/3rd into another disc and wrap in plastic wrap. Place in the fridge for at least ½ an hour.

3. For the lamb. Lightly dust the lamb meat with some flour. Heat some oil in a large oven proof pan or dutch oven, and brown the meat – but don’t cook it all the way through. Best done in 2 batches so that it browns and doesn’t stew. Put aside.
4. In the same pan, add a little more oil then throw in the onion, carrot, celery and garlic, stirring until translucent & soft. Add the lamb meat back in along with the bone (if using). Add the red wine and let simmer for just a couple of minutes. Add the stock, tomato paste, Worcestershire sauce and some salt and pepper to taste.
