1. Bring one gallon water to boil in a large pot with 2 Tbsp. salt. Taste the water to adjust to taste. Whisking constantly, gradually add polenta. Reduce heat to medium-low to a simmer. Stir often until polenta is tender and creamy, 40-45 minutes.
2. Prepare the sauce starting with the béchamel: in a saucepan melt 2 Tbsp. butter with 2 Tbsp. all-purpose flour. Add the milk and fontina and whisk continuously until melted over medium-low heat. Remove from heat, season with salt, pepper and nutmeg. Add the egg yolk and mix. Keep warm over a bain-marie filled with hot water (the sauce may be prepared one day in advance and gently reheated before serving).
3. Clean the onions. Heat 2 Tbsp. butter and 2 Tbsp. sugar in a saucepan over medium-low heat, add the onions and let them caramelize. Season with salt and add 3-4 Tbsp. vinegar. Let it evaporate and add 1 glass water. Reduce the heat to low, cover and cook for 15-18 minutes.
4. Add the chestnuts and cook for another 4-5 minutes, covered; add more water if necessary. Season with pepper and salt.
