1. Sprinkle the gelatin over the lemon juice to bloom.
2. In a small sauce pan over medium heat, combine the strawberries, sweetener and water. Stir to combine. Bring the strawberries up to a simmer then turn the heat to low and simmer for 20 minutes.
3. Tear the bloomed gelatin into small pieces and stir into the strawberries to melt. Turn off the heat and adjust sweetness. Let cool.
4. Spoon the strawberry jelly into a clean jar, cover and refrigerate. Use within 2-3 weeks. Can be frozen and thawed in the refrigerator before using.

1. Add strawberries to a small stockpot. Smash a bit with a potato masher to get the juices flowing.
2. Cook strawberries over medium-low heat for 10 minutes or until softened. Smash until juicy with small pieces of strawberries.
3. Add the other ingredients. Stir well and chill. This will thicken as it cools.

4. Put fresh or frozen strawberries with 2 TBS of erythritol and 10 drops of stevia or another low carb sweetener of your choice, and lemon juice if you like (optional), into a pot. Heat on the stove on medium high heat. If using lemon juice add more sweetener to taste.
5. When strawberries are softened (not cooked) mix them with immersion blender and cook until you are satisfied with thickness. Time to cook depends on how much water is in strawberries and if they are fresh or frozen.
6. When you are satisfied with thickness, remove cooked strawberries from the stove and stir in prepared and dissolved grass fed gelatin.
7. Pour hot sugar free strawberry jam into a clean glass jar and close it immediately.
