    2. In a stand mixer with a dough hook attachment, slowly add in oil, salt and flour. Mix until well incorporated and then continue to knead for about 2-3 minutes.
    3. Oil a glass bowl. Remove dough from mixer bowl and place in the glass bowl, turning to coat with oil. Cover tightly with plastic wrap and let rise for about an hour or until doubled in size.
    4. Spray an 8" x 8" glass dish with cooking spray. Divide the risen dough into 9 similarly sized balls. Arrange in the prepared dish, leaving some space around each ball to allow for rising. Cover tightly and let rise about 30 minutes.

    1. In the bowl of a large stand mixer attached with a dough hook OR in a large bowl, dissolve yeast in warm milk. Let stand 5 minutes then mix in pineapple juice, sugar, melted butter, egg, and salt until combined.
    2. Add 3-1/2 cups flour to liquid mixture and mix until dough pulls away from sides of bowl (if dough seems too sticky, add 1 tablespoon flour at a time until dough is smooth and tacky)
    3. If using mixer, knead dough on medium speed until smooth and elastic, about 6-8 minutes. If making by hand, turn dough onto a floured surface and gently knead until smooth and elastic, about 6-8 minutes. Place dough in a large greased bowl, turning once to grease top. Cover bowl with plastic wrap and let rise until doubled, about 1-1/2 hours.
    4. Punch risen dough down and divide into 12 pieces. Roll dough pieces into smooth balls and place in a greased 9x13 baking pan. Cover pan with plastic wrap and let rise 30 minutes or until doubled.

This dough is VERY sticky, so don't worry if it seems very wet, but you can also add 1-2 tablespoons more flour here if it seems like it needs it.
