Khatta Dhokla is one such recipe which is tangy and easy- to- make. All you need is some sour curd, basmati rice, chana dal, green chillies, mustard seeds, oil, lemon juice, baking soda, spice and you are good to go. This fluffy textured snack is loved by people of all age groups. It can be easily prepared at home in around half an hour.
Combine the dhokla flour, curd-water mixture, fenugreek seeds and 1¼ cups of hot water in a deep bowl and whisk well for 2 minutes. Then mix very well using your hand for atleast 3 to 4 minutes to make a lump free mixture. Cover it with a lid and keep aside to ferment in a warm place for 10 to 12 hours.

Gujarati Khatta Dhokla is a healthy dal cake, made with a batter of rice and dals like - urad dal and chana dal, flavoured with ginger and green chilli which is steamed and seasoned with mustard and sesame seeds. Being rich in proteins, Khatta Dhokla fits well into a lunch box meal or a light summer meal.
‘ Khatta ‘ means sour and these dhoklas do have a light sour taste. The sourness comes from the addition of sour yogurt. For a pronounced sourness, you could even add some lemon juice. However, if the curd is very sour, then no need for any lemon juice. It tastes awesome with some sweet chutney or papaya sambharo.
