1. Pre-heat your grill to high heat
2. Pat the steak dry with a paper towel. In a small bowl, combine the ghee and garlic (for the steak) and spread half of it all over one side of the steak. Sprinkle with salt.
3. When the grill is hot place the steak on it, butter side down and cook for 4-5 minutes, until charred*. Rub the remaining ghee mixture all over the top side, flip and cook until desired done-ness. Remove from heat, cover and let rest while the mushrooms cook.
4. Combine the mushrooms, melted ghee, garlic and a pinch of salt in a bowl. Place two layers of tinfoil on top of each other (shiny side inwards) and place the mushrooms in the center in one layer. Wrap the sides up tightly to make a packet.

2. Place the portabella mushrooms on a greased roasting tray and drizzle a tablespoon of olive oil over it. Sprinkle the garlic powder evenly over all four and scatter over the picked thyme leaves. Season with salt and freshly ground black pepper and place in the oven for 15 minutes. (When done, tip them to one side to allow excess moisture to run off.)
3. Season the steaks with salt.
4. Add one tablespoon olive oil to a large frying pan and sear both sides of the steaks so that a golden crust forms on all sides. Place the steaks on a rimmed baking tray and place into the preheated oven for 8-10 minutes until the center of the steak reaches 130 F for medium rare or 140 F for medium. Rest for 10 minutes before serving.
