1. In a medium-sized mixing bowl whisk together the almond flour, cocnut flour, pumpkin pie spice, cinnamon, ground nutmeg, ground ginger,all spice, cream of tartar, baking soda, xanthan gum, and salt until well combined. Set aside.
2. In a large bowl, using an electric mixer, cream together the butter, sweetener, vanilla extract, pumpkin, and eggs.
3. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Cover tightly and refrigerate for 30 minutes.
4. Preheat oven to 350F. Line two baking sheets with parchment paper or silicone baking mats and set aside.
