1. Stir the yeast and inulin into warm water (40 Celsius / 105 Fahrenheit). Cover with a kitchen towel and leave to proof in a warm place for 5-10 minutes. It should start to bubble and thicken.
2. Combine the dry ingredients (almond flour, whey protein powder, psyllium husk, baking powder, cinnamon and orange zest/powdered sweetener, if using) in a bowl and set aside.
3. In a food processor or in a bowl using an electric mixer, whisk the ROOM TEMPERATURE eggs and egg whites, melted butter (make sure it's WARM and not HOT) and the proofed yeast mixture.
4. Now ad the yoghurt and the first half of the flour mix. Blend until combined. Then add the second half of the flour mix. The dough will thicken quickly.

1. See recipe video of the cinnamon rolls for guidance on the methodology (similar yeast doughs, different ratios). And check out the post for deets, tips and possible subs! Note: if using a stand mixer, feel free to use the paddle attachment for easiest mixing.
2. Add yeast and a dash of ginger to a large bowl, set aside. Mix inulin (or maple syrup), water and sour cream in a small bowl. Heat up over a water bath to 105-110°F. And if you don't have a thermometer it should only feel lightly warm to touch.
3. Whisk thoroughly together the icing ingredients until it forms a thick paste. Pipe it in a cross shape atop each bun once they're completely cool.

2. In a small bowl, whisk together almond flour, coconut flour, baking powder, sweetener, cinnamon, nutmeg, ground cloves Set aside.
3. Add mozzarella and cream cheese to a large microwave-safe bowl. Cover the cream cheese with mozzarella (this will prevent the cream cheese from overheating and making a mess in your microwave). Melt in the microwave at 30 second intervals. After each 30 seconds, stir cheese until cheese is completely melted and uniform and resembles a dough in appearance (see photo for reference). This should only take around 1 minute total cooking time using cheeses straight from the fridge (less time if you have softened the cream cheese to room temperature). Do not try to microwave the full time at once because some of the cheese will overcook. You can also melt the cheeses over the stove in a double boiler.
4. Allow cheese dough to cool slightly (only a few minutes) so that it is still warm to the touch but not too hot.
