2. In a mixing bowl, use a fork to gently mix together your flours, baking soda, and baking powder. Next, in a large mixing bowl, beat together the sugar alternative with the butter.
3. For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring gently between additions. Then mix in the vanilla extract, eggs and milk (or heavy cream). Then fold in the coconut flakes by hand.
4. Bake your cookies for 14-18 minutes or until they turn golden brown
