1. Preheat the oven to 400 degrees Fahrenheit. Lay a silpat in the base of a shallow, oven proof tray. Scatter the shredded cheddar cheese across the silpat in a rectangular shape. Ensure the cheese is of an even thickness.
2. Scatter the shredded parmesan over the top of the shredded cheddar. Ensure that the cheese is evenly spread. At this point you can scatter over any additional seasonings if desired.
3. Transfer the tray to the oven. Bake for 8-10 minutes or until the cheese is starting to turn golden and brown at the edges. Keep a close eye on them so they do not burn. Remove from the oven and let the cheese cool for 10 minutes until you can peel the cheese easily off the silpat.
4. Cut the cooled cheese into 5 or so strips and then into squares. Cut the squares in half to create nacho-like triangles. Arrange the triangles of cooled cheese in an evenly layer across the silpat. Broil for 2-3 minutes until golden and crispy.

2. Melt the cheese in a double boiler or microwave. If you’re using the microwave, place the cheese in a large glass bowl, microwave it for 1 minute, and then in 15 second-intervals after that, checking and stirring until it’s melted.
3. Once the cheese is melted, use a fork to mix in the almond flour, flaxseed meal, salt, and pepper. Use your hands to knead it a bit until it looks like dough. (If the dough cools too much, you may need to microwave it for a few seconds so it’s easier to work with.)
4. Divide the dough into 2 equal balls. Spread or roll each ball of dough out onto the prepared baking sheets until each is a rectangle about 8 by 10-inches. Cut each into square or triangle-shaped chips. Spread the chips out on the baking sheets so they’re not touching.
