2. In a large bowl, mix together almond and coconut flours, baking soda, xanthan gum, and salt. Set to the side.
3. In a seperate bowl, using a mixer, cream together the coconut oil, butter, sugar substitute, vanilla extract, and eggs. Once creamed together, slowly start mixing in the dry ingredients. Then, fold in shredded coconut.
4. Drop the cookies onto the baking sheet and bake for 12 minutes or until golden around the edges.
