Low Carb Buttermilk Waffles are low carb, grain-free, dairy-free, and have a paleo option. I decided to take my buttermilk pancake recipe and make it over to be more waffle iron friendly.
This keto waffle recipe is low carb and totally sugar free, gluten free, grain free and paleo friendly. We use a combination of coconut flour and almond flour for better structure, texture and taste. To make sugar free waffles, our recipe for easy keto waffles is made with the following ingredients:
Add buttermilk, melted butter, eggs and syrup and stir until well blended (batter will be stiff). Add cold water 1 tablespoon (8 tbsp in a 1/2 cup) at a time until batter is easily spoonable and spreadable, about the consistency of a thick pancake batter. Spray waffle iron with oil spray.
In a second large mixing bowl combine: almond flour, coconut flour, baking powder, and 2 teaspoon sweetener of choice. whisk the dry ingredients together. Add the dry flour mixture to the wet egg mixture and whisk together thoroughly. Pour about ¼ cup batter into waffle iron being careful not to overfill.
