Because we always have tons of blueberries in the freezer, I’m always on the look out for new low carb blueberry recipes. I often just make a sugar free blueberry syrup that I’ll use over low carb waffles or pancakes. I also pour this blueberry sauce over low carb ice cream and mix it into plain high fat yogurt.

Remove the lid and cook on a medium heat for ca 15 minutes, stirring regularly. The mixture will reduce by ⅓ and thicken. Smash the berries with a spoon while they cook.
The first thing you’ll want to do is combine the blueberries, water, sweetener and cinnamon in a bowl. Mix them all together really well. Pour the mixture into a medium saucepan and cook on medium heat for 7-10 minutes or until softened through. If you used frozen blueberries, this will end up on the upper range of the time (see notes below).
