1. In a stock pot or dutch oven, melt 2 tablespoons butter over medium high heat. Brown the beef in batches, about 3 to 4 minutes. Transfer browned beef to a plate or bowl.
2. Reduce heat to medium and add remaing 2 tablespoons of butter. Add the onion, carrot, and garlic and saute until translucent, about 2 to 3 minutes.
3. Add 1 cup of the beef broth and scrape up any brown bits (deglaze). Add remaining broth after the pan is deglazed.
4. Add all remaining ingredients to the pot. Return the beef to the pot too. Stir to combine.

2. Add mushrooms, thyme leaves, celery and onion. Saute until mushrooms just start to soften and release their liquid, 3 - 5 minutes. Stir in garlic and saute until fragrant, about 1 minute.
3. Add beef broth, tomatoes, tomato paste, green beans, and bay leaves. Stir to combine and bring to a boil. Reduce heat to simmer for 1 to 1-1/2 hours until meat is tender. Salt and pepper to taste.
4. Ladle into soup bowls and garnish with fresh parsley leaves.
