Add the lemon juice to the pan and stir continuously. The milk will start curdling. Meanwhile, take a small bowl and soak the saffron in milk and sugar.
2. Now, line a large bowl with a muslin or cheesecloth. Pour the curdled milk in the bowl and bring the edges together to squeeze out the whey. Rinse the bundled chhena under running water to get rid of the lemon juice and then, hang it for 5-7 minutes.
3. Now, take a non-stick pan over medium flame and add the chenna along with the khoya and fresh cream in it. Cook this mixture till it starts leaving the sides of the pan while stirring continuously. Then, add the cardamom powder and the saffron soaked in milk. Add sugar and let it cook for 3-5 minutes.
4. When the mixture is cooked, turn off the flame and let it cool down for a while. When the mixture is cool enough, start kneading it to form a smooth dough and divide it into small balls.
