1. In a pressure cooker, add toor dal and water (almost double the quantity of dal). Pressure cook till about four whistles.
2. After the pressure is completely released, open lid and mash the dal lightly. Chop the vegetables into cubes.
3. Add the vegetables to the pressure cooker along with spice powders- sambar powder, chili powder, coriander powder, asafoetida and salt, curry leaves, and coriander leaves.
4. Pressure cook for one whistle. Keep aside and let the pressure release.

1. Soak lentils night before, if using stove top method (see below).
2. For all cooking methods, rinse the toor dal well before cooking. Then use method below that suits best (note prep ahead if stove top).
3. As the dal is cooking, warm the oil over a medium-high heat for the vegetables and add the onion and garlic. Cook for around 3-5 minutes until they have softened.
4. Once vegetables have cooked, add them to the lentils along with the tamarind water. Stir and cook the mixture a couple minutes while you prepare the tempering.
