1. Heat the coconut oil in a large frying pan over medium heat, once it begins to shimmer, add the onion and cook until softened, approx. 5 minutes. Add the garlic and ginger during the last minute.
2. While the curry is cooking, start with the chicken. Preheat the oven to 400°F / 200°C. Line a baking sheet with parchment paper and spray with a bit of oil.
3. Arrange some rice onto 4 plates, pour curry sauce over one half of the plates and top with breaded chicken in the middle.

1. Pre-heat the oven to 200°C and chop the garlic, onion, carrots and potato.
2. Spray the pan with low calorie cooking spray and gently fry the onions and garlic for a few minutes.
3. Add the carrots, potato, garlic granules, onion granules, stock cubes, garam masala, curry powder, soy sauce, and the water to the pan and bring to the boil. Then reduce the heat to simmer and put a lid on the pan. It will need to simmer for around 45 minutes, make sure to stir occasionally and add more water if it reduces too much.
4. While the sauce is simmering crush the tortilla chips into crumbs. An easy way to do this is putting them into a sandwich bag and bashing with a rolling pin!

3. Make steamed rice (I recommend Japanese short-grain rice for Japanese curry) using a rice cooker, a pot over the stovetop, a pressure cooker (Instant Pot), or a donabe.
4. Serve steamed rice and Japanese curry in a plate/bowl. Place Katsu on the top. Garnish it with fukujinzuke on the side.
